Resumen : RESUMEN: En el presente proyecto se desarrolla el diseño y construcción de un baño maría con el fin de realizar pruebas de tratamiento térmico, para el laboratorio de Ingeniería Agroindustrial de la Universidad Nacional de Chimborazo. El diseño que se utilizó fue el baño maría de agua no circulante, porque es el más parecido al existente en la Universidad, el cual decidimos mejorar sus características como su tamaño, volumen y un mejor control en tiempo y temperatura, teniendo en cuenta el espacio que se requiere para trabajar en el laboratorio. Se trabajó con una lámina de acero inoxidable AISI 304, este material tiene buena soldabilidad y doblado que permite trabajar correctamente en la construcción del equipo, además tiene resistencia al calor, resistencia a la corrosión que ayuda a desinfectar y limpiar correctamente el quipo. El equipo cuenta con un sistema de control de tiempo y temperatura, un sistema de alarma que se activa en el momento que la muestra haya alcanzado el tiempo determinado, tiene un suich que ayudara en el sistema eléctrico si llegara a existir un corto circuito, este se apagara inmediatamente evitando daño en el equipo. Los tratamientos térmicos en la industria alimenticia son importantes, debido a que los alimentos se pueden conservar por mucho más tiempo. Existen varios tipos de tratamientos térmicos como por ejemplo: escaldados, congelación, pasteurización, cocción, esterilización, etc. Pero de acuerdo con la temperatura que alcanza nuestro equipo que es 90°C, podremos realizar pasteurización alta, baja y rápida, escaldado y otras actividades como incubación.
Descripción : ABSTRACT: In this project, the design and construction of a water bath has been developed to carry out heat treatment tests for the Agroindustrial Engineering laboratory of the National University of Chimborazo. The design used was the water bath with non-circulating water, because it is the most similar to the existing one at the University, which we decided to improve its characteristics, such as its size, volume, better control in time and temperature, taking into account the space required to work in the laboratory. We worked with AISI 304 stainless steel sheet, this material has good weldability and bending that allows it to work correctly in the construction of the equipment, it also has heat resistance, corrosion resistance that helps to disinfect and clean the equipment correctly. The equipment has a time and temperature control system, an alarm system that is activated when the sample has reached the set time, has a suich that will help in the electrical system if there is a short circuit, this will turn off immediately avoiding damage to the equipment. Heat treatments in the food industry are important because food can be preserved for much longer. There are several types of heat treatments such as scalding, freezing, pasteurization, cooking, sterilization, etc. But according to the temperature that our equipment reaches, which is 90°C, we can perform high, low and fast pasteurization, blanching and other activities such as incubation.
