| Resumen : | El calostro representa una fuente natural de componentes bioactivos. En la actualidad existen varios estudios acerca del calostro en la industria y sus beneficios en la salud humana. El objetivo de la presente investigación fue realizar una revisión sistemática de bibliografía sobre el uso del calostro bovino en la industria láctea y sus beneficios en la salud humana. Se realizó una revisión sistemática de bibliografía científica desde el día 1 al 30 del mes de agosto de 2020, siguiendo las recomendaciones de la declaración PRISMA (Preferred Reported Items for Systematic review and Meta-Analyses). Se obtuvo como resultado 142 estudios en la primera fase, pasando un proceso de identificación, cribado, elección y la última fase la inclusión. Así, se llegó a realizar un análisis completo de 10 estudios relevantes que cumplen todo el criterio de los objetivos. En la presente investigación se identificaron aquellos factores que modifican la calidad del calostro (ambientales, fisiológicos, genéticos y de manejo), además de los diferentes productos elaborados a base de calostro bovino en la industria láctea denotando un cambio significativo de este recurso de residuo a materia prima. Finalmente se describe los componentes del calostro bovino (factores inmunológicos, crecimiento y nutricionales) en beneficio de la salud del ser humano |
| Descripción : | Colostrum represents a natural source of bioactive components. Currently, there are several studies about colostrum in the industry and its benefits on human health. The research´s aim was to perform a systematic review of the literature on the use of bovine colostrum in the dairy industry and its benefits on human health. A systematic review of scientific literature was carried out from August 1 to 30, 2020, following the recommendations of the PRISMA (Preferred Reported Items for Systematic review and Meta-Analyses) statement. As a result, 142 studies were obtained in the first phase, undergoing a process of identification, screening, selection and inclusion in the last phase. Thus, a complete analysis of 10 relevant studies that meet all the criteria of the objectives was carried out. In this research, those factors that modify colostrum quality (environmental, physiological, genetic and management) were identified, as well as the different products elaborated from bovine colostrum in the dairy industry, showing a significant change of this resource from waste to raw material. Finally, the components of bovine colostrum (immunological, growth and nutritional factors) for the benefit of human health are described |
